Cooking In Couture
It's summer and sometimes it's just too hot to cook. So, our Cooking In Couture quick and easy recipe series will help you whip up a delicious and nutritious meal in 30 minutes or less. So, come on , lets cook some mussels.
You will need:
1 LB Fresh mussels
1 Large non-stick skillet or sauté pan
1 large or two medium tomatoes
8 ounces of tomato paste
1/2 cup chopped onion
3-4 garlic cloves chopped
2 tablespoons Carrington Farms Coconut Cooking Oil (I choose this over olive oil because it's odorless, flavorless, much lighter and healthier)
1 Carrington Farms organic milled Flax Pax (I sneak flax seeds into any meal that I can because they are high in Omega 3, Omega 6 and fiber. These milled flax pax are my favorite because they come in individual single serving packets and they are so finely milled that you cannot even tell they have been added to a recipe.)
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon dried oregano
10 fresh basil leaves
2 cups water
Heat Coconut cooking oil in saucepan on medium for about 2 minutes. Add onions and garlic sauté until slightly translucent. Add tomatoes, cover and simmer for about 4-5 minutes then stir in remaining ingredients. Increase heat to high, simmer uncovered, stirring occasionally for about 10 minutes. Add 1 LB fresh mussels, coat with sauce and cook until all mussels have opened. Stir for a few minutes making sure that all mussels have soaked in the flavor of the sauce.
Serve in shallow bowl. Garnish with shaved parmesan cheese and one basil leaf. I always serve this dish with fresh Italian bread. Its great for dipping into the sauce on your plate.
